The Kasumi Usuba knives are made of white high carbon steel and soft iron. Kasumi knives are relatively easier to use and are recommended for all levels of users.
“Usuba” literally means a thin knife. The blade is thin and straight in rectangular shape. It is an essential knife for professional Japanese chefs for peeling vegetables into thin sheets and cutting vegetables into thin strips. This is Azuma style.
What is Kasumi Knives?
Kasumi knives are made from two materials by joining a piece of soft iron (Jigane) with a piece of high-carbon steel; the carbon steel forms the blade’s edge, and the soft iron forms the body and spine of the blade. Some people call Kasumi “awase” (which literally means ‘to combine).
