The Kasumi Deba knives are made of white high carbon steel and soft iron. Kasumi knives are relatively easier to use and are recommended for all levels of users.
Deba is a heavy knife that is made to filet and butcher whole fish. The heft of the Deba knife allows it to cut through the heads and bones of a fish, and its smaller pointed tip fillets the flesh from the bones.
What is Kasumi Knives?
Kasumi knives are made from two materials by joining a piece of soft iron (Jigane) with a piece of high-carbon steel; the carbon steel forms the blade’s edge, and the soft iron forms the body and spine of the blade. Some people call Kasumi “awase” (which literally means ‘to combine).
